That first cold bite of ice cream on a hot summer day is a moment to be experienced over and over again. On Sunday afternoons you will quite often find us at my in-laws for Sunday dinner. And my kids know that ice cream after dinner is a tradition at Grandma’s house, a tradition that is not to be missed. I love that during the summer we don’t have to worry about leaving at a certain time to get the kids in bed in time for school the next morning. It lets our visits be a little more leisurely.
Since we all live close to each other we get to spend a lot of time with family during the summer. My Mom is a school teacher and she plans weekly outings with the boys throughout the summer. My Mom also knows that a container of vanilla ice cream in the refrigerator is a requirement for her three grandsons. What can I say, ice cream just brings people together.
Even if it’s not family that you are gathering with, summer is a great time for all kinds of get togethers. And I know that in addition to some ice cream, you are going to want to wow your guests with a fabulous meal as well. Blueberries are a popular ingredient for summer desserts, but have you ever thought of using blueberries for a savory dish? You should! Make a savory blueberry sauce to top your grilled chicken (or any meat) this summer.
My savory blueberry sauce is only a few ingredients: garlic, balsamic vinegar, lemon juice, water, and blueberries.
Cook that down to a nice sauce and then it’s ready to serve! Spoon the savory blueberry sauce over your grilled item of choice, I made chicken, and you’ve got an entree to impress.

Savory Blueberry Sauce
Ingredients
- 2 Tbsp Olive Oil
- 3 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 1/4 cup water
- 1 cup fresh blueberries
- 1/4 cup lemon juice
Directions
- Heat olive oil over medium heat and add minced garlic. Saute the garlic until golden.
- Add balsamic vinegar and water, boil for 1-2 minutes.
- Add the fresh blueberries. Cook until the skin on the blueberries burst.
- Add lemon juice.
- Cook down until the sauce has thickened enough to serve.
- Spoon over cooked chicken.
