Are you expecting a crowd? Keep them happy with a bowl of Hamburger Queso Dip and Chips
My Mom is the one who instilled in me a love of watching sports. She took me to my first professional basketball game. She taught me football terms (what a 1st down was). We always watched sports in my home growing up. I didn’t know the term homegating yet, but we were certainly good at the idea already. My adoration for tailgating at home has only increased since then.
When my husband and I were dating in college there was a Saturday afternoon where I was hanging out with him at his apartment (I lived in the dorms). He went into the kitchen to make us some lunch and left me in the living room by myself, his roommates were in their bedrooms. I flipped on the TV and, being a Saturday afternoon, found a college football game to watch while he made lunch. In the midst of this one of his roommates walked out into the living room, saw me watching football, and went into the kitchen to ask my now husband why he was making me watch football by myself. He smiled and said I did that all on my own. His roommate then asked where he could find a girl like me.
We still watch football together. In fact, between college and professional football, we watch a lot of football. And we still like to eat while we watch football. The great thing about homegating is getting to create lots of good food to eat while we watch. Though this recipe isn’t just good for game watching, you can use it for lots of other gatherings as well!
When I think of tailgating I think of hot dogs and hamburgers. But I also live in Texas where queso reigns. I’m combining the two and creating a meat lovers hamburger queso dip. Great for crowds when you are watching the game or whatever activity you have planned.
Hamburger Queso Dip Ingredients
- 2 pounds melting dip cheese
- 1 pound ground beef
- 1 can diced tomatoes and green chiles
- Mexican Blend shredded cheese
- fresh cilantro
Put 2 pounds of cheese, ground beef, and tomatoes and green chiles into a slow cooker and combine. Heat on low for about 2 hours.
When the cheese was nice and melted and the meat and veggies were combined I poured the dip into a serving bowl. Then I topped the dip with some shredded Mexican Blend cheese. And it wouldn’t be a ‘hamburger’ queso without a little bit of green. I chopped up some cilantro to sprinkle on the top. Cheesy meaty goodness is exactly what football watching requires.

I served my hamburger queso with a platter of tortilla chips. This recipe makes enough dip for a crowd so maybe get a couple bags of chips.
