I only had a couple of requirement when looking for a beignet recipe. It needed to be simple and it needed to taste good. These were super simple to make and the kids gobbled them up. Requirements fulfilled.
If you are looking for a Cafe Du Monde quality beignet recipe, this is certainly not that. But if you are looking for a little bit of deliciousness for mardi gras, these can fit the bill.
I think I’m going to call them beignets for the la-zay (lazy).
There are only three ingredients for these easy beignets:
refrigerated flaky biscuits
powdered sugar
oil to fry the beignets in (peanut or canola)
Cut the biscuits into pieces. Mine worked best when I divided my biscuit into quarters.
Then fry them. Pour oil into a frying pan and heat it to approximately 350 degrees. Drop the dough into the oil and cook for about a minute on each side.
I fried about two biscuits, or eight small pieces, at a time. Then move them to a plate lined with paper towels. And cover generously with powdered sugar.
Then they are ready to eat! They are best eaten warm. That was not a problem at my house.
