I’m a dedicated breakfast eater. I also have some strict requirements as what counts as breakfast. Namely, I need to eat breakfast food for breakfast. My day can’t start until I have breakfast. But I’m also a Mom with 3 kids and sometimes I need to be able to eat breakfast on the go. Particularly during the school year.

And those kids? Sometimes they need to eat breakfast on the go as well. Teenagers in particular like to sleep as late as possible. So I need some breakfast options that we can eat on the go.

I love parfaits and with just three ingredients this one is a winner.

For my Apple Cinnamon Toast Parfait I used Eggo Cinna-Toast Cinnamon Roll, vanilla yogurt, and baked apple slices.

I toasted up a few slices of the Eggo Cinna-Toast Cinnamon Roll to get started.

I picked up a box of Eggo Cinna-Toasts and Eggo Choco-Toast while I was at Walmart. Eggo Waffles and Toasts now have colors and flavors from natural sources, it says it right on the box! I also got the vanilla yogurt that I needed and I even found a jar of pre-baked apple slices. Having all the ingredients ready meant I just needed to layer them together to create my breakfast parfait!

After toasting I broke apart the Eggo Cinna-Toast pieces to make my parfait. I layered pieces of Eggo Cinna-Toast, apple slices, yogurt, more Eggo Cinna-Toast, more apple slices, more yogurt, and then more Eggo Cinna-Toast pieces.
