Taco Lime Shrimp Pasta

I do my grocery shopping for the week on Saturday. I picked this day because I do a weekly restock on stuff for the kids lunches. Shopping on Saturday ensures that the lunch food specific items make it through the week. But I also like shopping on Saturday because I can look at the week ahead and plan out dinner. I can see what nights we’ll be home, which nights we have events, and meal plan around our schedule. On nights with a lot going on I know I need to pick a meal that I can make fairly quickly, or that I can partially make ahead. This Taco Lime Shrimp with Creamy Avocado Pasta Recipe fits both of those descriptions, I can make the sauce ahead of time and the rest is really quick.

Taco Lime Shrimp Pasta

While I was grocery shopping at Walmart I picked up everything I needed for this recipe, from the La Moderna pasta to the shrimp to the tomatillos.

Taco Lime Shrimp Pasta

The homemade creamy avocado sauce can be made while you’re making dinner or ahead of time to make this a really quick meal. I made my sauce ahead of time. The tomatillos, jalapeño pepper, onions, and garlic all get roasted in a pan on the stove. Then they go into the food processor with the avocado, lime juice, cilantro, and salt.

Once all the veggies and other ingredients are pureed together you can store your sauce in an airtight container for when you need it. Because I had made my sauce ahead of time when dinner time rolled around all I needed to do was cook my pasta and my shrimp.

When my pasta was cooked al dente I tossed it with some of my avocado sauce. One of the great things about La Moderna is that it’s a high protein pasta. Great for my teenage boys and me!

The frozen shrimp I bought were technically precooked as well and prepared for me. So really I just wanted to heat them up and make a sauce for them. The shrimp got marinated for about 20 minutes with taco seasoning, oil, and lime juice. Then I poured it all into a frying pan and cooked it until the sauce thickened.

The taco lime seasoned shrimp are served on top of the avocado sauce pasta. And you’ve got dinner in less than 30 minutes, which is a complete win for a busy weeknight dinner. I bet you never thought a pasta recipe with shrimp could be such a quick and easy meal.

Taco Lime Shrimp with Creamy Avocado Pasta Recipe

Taco Lime Shrimp

Ingredients

  • 12 oz frozen shrimp
  • 1 tablespoon oil
  • 2 tablespoons taco seasoning
  • 1/4 cup lime juice

Directions

  • Marinate the shrimp in the oil, taco seasoning, and lime juice for 20 minutes.
  • Heat in a pan on the stove. Cook until the sauce thickens (you can add corn starch as a thickener if desired).

Creamy Avocado Sauce

Ingredients

  • 3 tomatillos
  • 1 jalapeno pepper
  • 1 onion, roughly chopped
  • 3 avocados
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro
  • 1 tsp chopped garlic

Directions

  • Cook the tomatillos, jalapeño, and onion in a pan on the stove until they start to brown, about 10 minutes.
  • Puree everything in a food processor.
  • Salt and pepper to taste.

La Moderna Pasta

  • Prepare according to the directions on the package

Toss the pasta with the creamy avocado sauce. Serve topped with the taco lime shrimp. Enjoy!
