Nothing makes you feel better than people telling you that you don’t look old enough to have teenagers. In fact, just last week an acquaintance I saw at the grocery store assumed that my teenage son was my brother. I told her I was flattered, but that he was really my son.

With warmer weather coming I wanted to pick up some frozen treats. Weight Watchers® Ice Cream Novelties are individually wrapped for portion control. I like to cook a dozen eggs at a time and then portion them out for my breakfast throughout the week. When the eggs are about halfway done cooking I add in several handfuls of spinach and fresh diced tomatoes. Finish cooking the eggs and wilt the spinach.
Spoon the egg mixture over the flatbread, roll, and eat. Portion out the remaining scrambled eggs into resealable bags and store in the fridge for a quick breakfast throughout the week.
