Refried Bean Quesadillas

Refried Beans Quesadillas, Chicken and Vegetarian recipes

Tex-Mex is a way of life at my house. I heard someone say that one of the great things about living in Texas is that you’re never more than 5 minutes away from chips and salsa. This I know to be true, especially if I’m home. I make it a point to try to always have chips and either salsa or queso on hand at all times. But with the introduction of seven new flavors of BUSH’S COCINA LATINA®, I’m stepping up my Tex-Mex game with two new Refried Bean Quesadilla recipes.

Chicken Refried Beans Quesadilla Recipe

First up is a more traditional chicken quesadilla, made with refried beans. I cooked 2 chicken breasts and then cut them up into small pieces, but you could just as easily grab a rotisserie chicken to shred. To the chicken I added 8oz of salsa. I spread 2 heaping tablespoons of the chicken and refried bean mixture over some whole wheat flour tortillas and topped generously with cheese (about 1/3 cup).

My 2nd refried bean quesadillas are a vegetarian version. I mixed a can of fat free vegetarian refried beans with 1/2 cup of whole kernel corn, sliced green onions (I used 2 onions), and 1/4 tsp ground cumin.

I spread 1/4 of that mixture over soft flour tortillas, and again topped it generously with shredded cheese. The cheese was a blend of four cheeses specifically labeled for Tex-Mex cooking.

On top of the cheese goes another tortilla and then it was onto the griddle. I cooked each side until they were browned and the cheese inside was nice and melted.

The Vegetarian Refried Bean Quesadilla recipe made 4 whole quesadillas, while the Chicken Refried Bean Quesadilla recipe made 5 whole quesadillas.  Slice each quesadilla into 4 equal parts to serve.

In addition to the salsa in the chicken quesadilla recipe, I also put out a bowl of salsa to dip the quesadillas into. Because we really like salsa. You can also serve with sour cream, cilantro, and jalapeños (if you really want a kick).

    I like quesadillas, but my favorite would have to be enchiladas. Like quesadillas, you can make them a thousand different ways. They are a great way to clear the cupboard or freezer of things that have been up there too long.

    I love some good floutas and guac…but I miss Cali-mex and the way they made shredded beef tacos with hand fried corn tortillas! And churros! (Seen those popping up a few places here, but sort of fast food versions that are not half as good as the ones the street vendors used to sell. They have “briscuit tacos” here which have the same type of meat, but they’re not the same.

    Now, think grilled steak covered in cactus…I’m not sure I saw that one in Cali, and that’s good. That’s Tex-mex, right?
