Grilled Fish on Pineapple Planks
Ingredients
- 1 fresh pineapple
- 4 fish filets
- 2 tablespoons Mazola® Corn Oil
- Salt and pepper
I really wanted to use as many fresh ingredients as I could to cook my fish. I started by using fresh pineapple planks instead of cedar planks to grill my fish. Instead of a creamy herb rub, I made a fresh pineapple salsa topping. I also used Mazola® Corn Oil instead of butter.
Grilling on pineapple planks is simpler than it sounds. You’ll need a fresh pineapple and your choice on fresh fish. I chose tilapia because it’s a tender white fish with a mellow flavor, and it picks up the flavor on the pineapple really well. Cut the top and bottom off the pineapple and then slice vertically into planks. Super easy! Just make sure your pineapple is big enough for the fish filets you pick. I got 5 pineapple planks from my pineapple, which is perfect for my family of 5.
Lay each fish filet on top of a pineapple plank. Brush the fish with some Mazola Corn Oil and then sprinkle with salt and pepper. Mazola has a smoke point higher than most cooking oils at 450°F and performs well in a variety of cooking applications. Many home cooks may not realize that all cooking oils have a smoke point that, once exceeded, not only negatively affect the food’s flavor and nutritional value. Place on the grill and cook until the fish is just cooked through, 15 to 20 minutes. You want to grill your fish until they are flaky.
While your fish is grilling, you can put together your fresh pineapple salsa topping.
Fresh Pineapple Salsa
Ingredients
- 1 1/2 cup diced pineapple
- 1 small red pepper finely chopped
- 1 small orange pepper finely chopped
- 1/2 small red onion finely chopped
- 1/4 cup coarsely chopped cilantro
- Juice of 1 lime
- 1 teaspoon lime zest
- 1/2 teaspoon salt
- 2 tablespoons Mazola® Corn Oil
- 1 medium jalapeño, chopped (optional)
Directions
- Toss all the ingredients together.
- Serve on top of the cooked fish.
