Since moving to the Pacific Northwest I’ve fallen in love with the outdoors. Hiking almost every weekend since I arrived, I’ve explored vast areas of the state of Oregon. From hikes near the coast to up in the mountains, I love getting outside and seeing where my body can take me.
However, in order to get outside and do all the activities that I enjoy, I also have realized how important it is to fuel my body in order to have the energy that I want. And that includes making sure I get enough protein. I’ve previously shared how I make Protein Waffles using Naked Nutrition Vanilla Whey Protein. Now Naked Nutrition has two new products, Naked Bake and Naked Cake that make it even easier to create delicious protein filled recipes.
Naked Bake is a premium banana bread protein mix, while Naked Cake is a premium protein pancake mix. The Naked Bake comes with several recipe ideas right on the side of the packaging, from using it in a shake, to making a single muffin in the microwave, or baking protein banana bread. I put my own twist on it, using the banana bread recipe from the container, but instead baking mini protein muffins with an easy crumb topping.
How to Make Banana Bread Protein Mini Muffins
Follow the directions on the container to combine the Naked Bake Banana Bread Protein mix with water. Stir to combine. Then I sprayed my mini muffin tin with non-stick baking spray and portioned out my banana bread protein mix. I also topped each mini muffin with a simple crumb topping mix.
Easy Muffin Crumb Topping
The best crumb topping is just three ingredients: salted butter, flour, and sugar. (I did use a combination of granulated and brown sugar which technically makes this four ingredients. Okay, you can also add in a dash of cinnamon which brings us to five ingredients, but that’s optional.)
Simply combine the flour and sugar in a bowl. Then cut in the butter until crumbs start to form.
Sprinkle the crumb topping on top of muffins, breads, or even pies. It’s so yummy!
Crumb topping ingredients
- 1/2 cup all-purpose flour
- 1/2 cup sugar (or 1/4 cup granulated sugar and 1/4 cup brown sugar)
- 4 tablespoons salted butter, softened
- 1/4 teaspoon ground cinnamon (optional)
Mini Muffins
- Combine the protein mix and water
- Evenly spoon into mini muffin tin that has been sprayed with non-stick baking spray
- Top muffins with crumb topping
- Bake for approximately 12 minutes
- Allow to cool and enjoy!
Isn’t everything fun when it’s mini? Even pancakes! It’s easy to use the Naked Cake Protein Pancake Mix to make these silver dollar pancakes for a protein packed breakfast.
Serve them with some fruit and your favorite pancake toppings, like this Maple Cinnamon Honey Greek Yogurt.
Of course you don’t have to make things mini, even though they are fun to eat. You could also use your mixes to make full sized muffins, pancakes, waffles, and more.
