Honey Lime Grilled Chicken and Veggie Skewers
I love a good sweet and tangy combo, and these chicken and veggie skewers are the perfect combination. Bite-sized pieces of chicken and vegetables mixed with a flavorful marinade and then cooked over a fire make this a delicious summer meal to enjoy outdoors. Plus, eating off a skewer means less dishes, and that’s always a plus, right?
Honey Lime Grilled Chicken and Veggie Skewers Ingredients

- Chicken
- Zucchini
- Bell peppers
- Onions
- Peaches (optional)
- Mazola Corn Oil
- Lime juice
- Honey
- Soy Sauce
- Mustard
Start by dicing your veggies. I used bell peppers, zucchini, and onions. Peaches are a fun addition. Experiment and try dicing up different fresh veggies that you have around the house. Next dice up some chicken. I cut mine into small cubes. Once all the pieces are ready it’s time to make the marinade. Mix together Mazola Corn Oil, lime juice, honey, soy sauce, and mustard. Why Mazola Corn Oil? Mazola Corn Oil is a heart-healthy* cooking oil and creates marinades that make great-tasting food because it has a neutral taste that lets the natural flavor of your food stand out.
When your marinade is ready place your chicken, veggies, and marinade all in a large resealable plastic bag. Shake everything up really well, making sure to coat all your ingredients. Then let it sit for 15 minutes. While your chicken and vegetables are marinating head outside and make sure your grill is ready.
After marinating for 15 minutes you can thread your chicken and veggies on some skewers. Then place the skewers on the grill. Cook for about 10 minutes, turning once after 4 to 5 minutes. Mazola Corn Oil has a high smoke point (450˚ F), great for grilling and stir frying at high temperatures.
Want to make this for a crowd? Easy! Just double, or triple, the ingredients to make a bigger batch. Marinate and cook for the same amount of time, and you’ll be able to feed a crowd quickly.

Honey Lime Chicken and Veggie Skewers
Ingredients
- 1 tablespoons Mazola® Corn Oil
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon mustard
- 12 ounces boneless, skinless chicken, cut into 1-inch pieces
- 1 medium zucchini, cut into pieces
- 2 bell peppers, cut into pieces
- 1 onion, cut into pieces
Instructions
- Combine Mazola® Corn Oil, lime juice, soy sauce, honey, and mustard to make a marinade.
- Place cut chicken, zucchini, bell pepper, and onion into a large resealable bag.
- Add marinade to bag.
- Shake to coat chicken and vegetables.
- Let sit for 15 minutes.
- Thread chicken and vegetables onto 10 inch skewers.
- Cook over a grill for 10 minutes, turning once.
Notes
Serve warm or chilled.
