Homemade Ice Cream Sandwiches

It gets hot here in Texas and there is no better way to cool off at the end of the day, or any part of the day, than with some ice cream!

When there is ice cream in the freezer my kids think I’m the best Mom ever. The boys are primarily vanilla eaters, by the scoop in a cup or cone. And we all love a good ice cream sandwich. So what better then to take some vanilla ice cream and make our own homemade ice cream sandwiches.

Start with your favorite chocolate chip cookie recipe.

In addition to the cookies you will also need some ice cream and sprinkles.

Once the cookies were cooled we could start assembling the ice cream sandwiches. An upside down cookie topped with a scoop of vanilla ice cream. Then another cookie added to the top.

After adding the second cookie on top, push the cookies together. Then I used the back of a large metal spoon to go around the sides of the ice cream sandwich and smooth out the ice cream.

While the sprinkles are technically optional, I think everything is better with sprinkles. I had the kids help add sprinkles to the sides of our ice cream sandwiches.

In addition to the Va-Va Vanilla Oldest Twin and I also picked up some Cravin’ Cookies ‘N Cream. A bowl of ice cream at night after the kids go to bed is one of my favorite summer time indulgences.
