Classic Berry Dump Cake

This simple cake gets its name from how easily it’s prepared! All you have to do is dump a few simple ingredients into a baking dish and put it in the oven for a sweet treat that’s ready in no time. As easy to serve as it is to prepare, this dessert is a crowd pleaser!

Dump cake is admittedly not the most appetizing name for a dessert. But it’s actually incredibly delicious.

So, what exactly is a dump cake? A cross between a cake and a cobbler, it’s a super easy dessert to make because all the ingredients are literally dumped into a baking dish and put into the oven.

We made smoothies, ate lots of fresh fruit, and I used the blueberries and strawberries to make a crowd pleasing dessert.

Classic Berry Dump Cake

Ingredients

  • Blueberries
  • Strawberries
  • Sugar
  • Ground ginger
  • Grated lemon peel
  • Fresh lemon juice
  • Yellow cake mix
  • Butter, melted

Other than the ingredients you just need a 9×13 baking dish. I did slice up my strawberries, but the blueberries just got dumped into the bottom of the pan.

Combine the sugar and ground ginger and dump that on top of the berries. Then I grated the lemon peel over the top of the sugar and drizzled the fresh lemon juice.

The next step is to dump the entire cake mix package on top of the fruit. Spread it out as best you can. Finally pour the melted butter over the top of the cake mix. Tilt the pan to cover as much of the top as possible with butter.

Now pop the cake into a preheated oven!

My kids were amazed at the fresh fruit smell of this simple dump cake. While the fresh blueberries and raspberries give this cake a sweet flavor, the lemon juice and grated lemon peel also give it a wonderful burst of citrus.

You can even serve your dump cake with a scoop of vanilla ice cream. Either way, you’ll have yourself a fruity dessert that’s guaranteed to please.

Classic Berry Dump Cake

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Ingredients

  • 2 cups fresh blueberries
  • 4 cups fresh strawberries
  • 1/2 cup sugar
  • 1/2 teaspoon ground ginger
  • 1 teaspoon grated lemon peel
  • 2 tablespoons fresh lemon juice
  • 1 box yellow cake mix
  • 3/4 cup butter, melted
  • Vanilla ice cream, if desired

Instructions

    1. Preheat the oven to 350 degrees.
    2. Spray 13x9-inch pan with cooking spray.
    3. Spread berries evenly in the bottom of the baking pan.
    4. In small bowl, mix sugar and ginger. Sprinkle mixture over berries.
    5. Grate lemon peel and sprinkle over the sugar.
    6. Drizzle lemon juice over top.
    7. Top with dry yellow cake mix. Gently shake pan to evenly distribute the mixture.
    8. Melt butter and pour over the top. Tilt the baking pan to cover as much of the top with butter as possible.
    9. Bake 45 to 50 minutes, until the top is lightly golden brown. The top should be mostly dry and bubbly around the edges.
    10. Allow cake to cool for 15 minutes before serving.
    11. Top servings with vanilla ice cream if desired.

Notes

1 medium lemon yields about 3 tablespoons of juice and 2-3 teaspoons grated lemon peel.
It's normal to see some wet spots as well as some dry cake mix spots when the cake is done.
