C is for Chocolate Chip Cookie

Growing up my Mom sent my lunch to school with me every day. And my favorite part of my lunch? Homemade chocolate chip cookies. I didn’t get cookies every day, but I did get them often.

Sometimes I would even share a cookie. (My friends loved my Moms cookies, her chocolate chip cookie recipe is legendary.)

What better treat for learning the letter C with Littlest this week than to make some of my Moms famous chocolate chip cookies.

Chocolate Chip Cookies

Ingredients
1 cup shortening
1 1/2 cups brown sugar
1 tsp vanilla
2 eggs
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
6 oz. chocolate chips

Cream together the shortening and sugar. Then add the vanilla and eggs. Mix well.

Add the flour, baking soda, and salt to the creamy shortening/sugar mixture. Once it is all mixed together, add the chocolate chips.

Place rounded spoonfuls on an un-greased cookie sheet and bake at 350 degrees for 8-10 minutes. (Mine are perfect after 9 minutes.) Take them out when they just start browning on top.

Place on a cooling rack to cool (just enough to eat).
