If you would have told my 16-year-old self that someday her annoying/adorable younger sisters would someday be her best friends I’m not sure she would have believed you. There are some pretty big age gaps between my sisters and me. While there are only 3 of us, our ages span over a decade. Which meant when I was younger I did a lot of babysitting. But now that we are all adults my sisters have become my best friends. And, luckily for us, we all live near each other and are able to spend a lot of time together. And one of our favorite activities might be eating together.
My sisters and I sometimes joke that we share a brain. And, that our collective IQ goes down when we are all together. If you’re looking for a quick meal to share with your friends, or family that are your friends, this Peanut Noodles dish is versatile, only uses about 5 ingredients, and can be made in less than 30 minutes. The Skinner pasta gets cooked in chicken broth rather than water to punch up the flavor. Then it gets tossed with peanut butter, soy sauce, crushed peanuts, and sliced green onions. That’s about it!
Peanut Noodles
Ingredients
- 24 oz Skinner Pasta Thin Spaghetti
- 10 cups chicken stock
- 5 Tbsp soy sauce
- 5 Tbsp peanut butter
- Crushed peanuts (optional)
- Sliced green onions (optional)
- Sriracha (optional, to taste)
Directions
- Cook noodles in chicken stock for 9 minutes, until al dente
- Drain off most of the liquid
- Add soy sauce and peanut butter. Mix well.
- Add crushed peanuts and sliced green onions.
