Watermelon Cake Recipe

Easy Watermelon Cake Recipe perfect for summer celebrations

While browsing at the store the other day I noticed the clearance shelf with these watermelon cake mixes. Oldest Twin loves watermelon. And I know it’s a quintessential summer experience or something. But no matter how much I try, I just don’t like eating watermelon.

 

However, I do like some watermelon flavored candy. And at the least I figured the cake would be a fun treat for Oldest Twin and Littlest (the only other person in our house who likes watermelon). So I put the box in my cart.

It sat on my pantry shelf for a couple weeks, but I finally decided to be brave and give it a try.

The box does say cupcake mix, but I’m a rebel and made mine into a bundt cake. Then I made a batch of my favorite homemade buttercream frosting. With plenty of green food coloring.

Luckily it tastes like watermelon candy flavor. And that is the kind of watermelon that I do like.

 

 

 
 

 

 
 
 

 

 

I’ve also been inspired to make a cake that only looks like watermelon. My plan is to use a yellow cake recipe and dye it red, toss in some mini chocolate chips to look like the seeds, and topped again by some green food coloring.

    That’s super cute! I guess you could do the same thing with strawberry cake mix? Ooh, ooh, and you could cut green fruit roll-ups into strips to look like the stripes on a watermelon….you’ve got my creative kitchen juices flowing now… πŸ˜‰

    Your brave I also saw that and just couldn’t bring myself to buy it to make cupcakes for the kids it just didn’t look good. But it sounds like it tasted good.

    Your cake looks beautiful! A watermelon-flavored cake sounds pretty unique. Imagine how fun that would be to bring to a potluck picnic! The frosting really does it, though. It just wouldn’t loos the same with white or brown frosting.

      Thanks, Nikki! They did have some watermelon frosting as well, but that just seemed like a little too much watermelon for me! But yes, it had to be green πŸ™‚
