Strawberry Fudge

Over the years Valentine’s Day has become one of my favorite holidays. It’s always been a family and friends holiday. Growing up my Dad would buy candy and cards for me and my sisters. Now that I have my own kids I always make sweet treats for them, this year it’s homemade Strawberry Fudge. And make enough that we can share with all of our friends.

Littlest has become obsessed with cards that move and make noise. When I saw a singing cupcake card from American Greetings® I knew instantly it was the right card for him. (You can see the video I made of the card in action.) I also picked up some cute ombre stickers and a white plastic plate to serve our treats on. But first to the treat itself, Strawberry Fudge. I started with a white fudge recipe, the strawberry comes into play with the topping.

Strawberry Swirl Fudge

I combined about half an ounce of red writing gel with 2 teaspoons on strawberry extract. After I had poured the fudge into a pan I drizzled the strawberry flavoring on top. Then I used a wooden skewer to draw through the strawberry lines and give it a swirled effect.

To enhance to strawberry flavor I picked up a bag of M&M’s® Strawberry at Walmart. 
Once my fudge was mostly set I added the M&M’s® to the top. You could also mix some into the middle of the fudge as well. I put the entire pan into the refrigerator until it was completely set and ready to eat.

The varied colors of the M&M’s® Strawberry go perfectly with the ombre heart stickers around the edge of the plastic plate.

A DOVE® Valentine’s Day tin tops off of our assortment of sweets. There are even some heart shaped chocolates in the box.

Googly eye cards seem to be by theme for Valentine’s Day this year. I’m pretty sure my boys find them as amusing as I do.

Strawberry Fudge

Ingredients

  • 2 teaspoons strawberry extract
  • 0.67 ounces red writing gel
  • 3 cups sugar
  • 3/4 cup butter
  • 2/3 cup half and half
  • 12 ounces white chocolate chips
  • 1 7-ounce jar marshmallow creme
  • 1 1/2 teaspoons vanilla extract

Directions

  • Line a 9×13 pan with parchment paper and spray with cooking spray.
  • Combine sugar, butter, and half and half in a large pot over medium heat until the mixture comes to a boil. Stirring constantly, cook for 5 minutes.
  • Add white chocolate chips and stir until they are melted.
  • Remove from heat. Add marshmallow creme and vanilla extract. Stir until smooth and well combined.
  • Pour fudge mixture into prepared pan.
  • Combine red writing gel and strawberry extract in a small bowl. Microwave on medium power for 10 seconds. Stir to combine.
  • Drizzle strawberry mixture over fudge. Using a wooden skewer or a knife, run through the strawberry drizzle to create a swirled effect.
  • Place in refrigerator to set.
  • Cut into squares and serve.

    About the strawberry extract and red gel. Did you really mean 10 minutes in the microwave or 10 seconds?
