Some days we all need a treat. Something just for us. A dessert for one.
Because the smoke detector kept waking us up all night with its incessant beeping (a la Phoebe in Friends). Regardless of the fact that the battery was replaced. And the system was reset.
Or because it’s summer and the kids want/expect you to be their cruise director and keep them entertained all day. And when you insist that they are capable of entertaining themselves they whine (or wrestle/fight).
Sometimes you just need chocolate. Right now. Microwave brownie in a mug to the rescue.
I used a mason jar for mine. Easier to watch and make sure it wasn’t going to spill out the top.
Start with the dry ingredients: flour, brown sugar, and cocoa powder. Stir it together until it is completely mixed and there aren’t any lumps.
Then add the wet ingredients: melted butter and milk. Toss in a few chocolate chips, or this time I used butterscotch chips.
Microwave in 30 second intervals until it’s cooked. Microwave ovens vary, but mine took one minute. You really don’t want to overcook it. Better to go gooey than burned.
Then hide where your kids/spouse can’t see you and eat your ‘just big enough for one’ mug brownie dessert.
Ingredients:
1/4 cup flour
1/4 cup brown sugar (packed)
2 Tbsp cocoa powder
2 Tbsp melted butter
2 Tbsp milk
