Homemade Crepes with Lemon and Powdered Sugar

Both of my parents are Francophile’s. They love France. It helps that they both speak French. Of course, did they teach their kids? No. Thankfully they did expose my sisters and I to lots of delicious French foods. One of my happiest memories is of them making homemade crepes for us in the kitchen. Warm crepes drizzled with fresh lemon juice and powdered sugar is still one of my favorite things.

It always surprises me when people think that crepes are hard to make. They’re so easy! Depending on whether you want to make crepes for savory or sweet fillings the recipe  ranges from 5-6 ingredients: flour, milk, eggs, oil, salt, and sugar (for the sweet crepes).

The main ingredient for both the sweet and savory crepes is milk. I drink milk and use it everyday, starting with breakfast! I also use it for protein shakes after my workouts and often with dessert after dinner.

Not only do homemade crepes use just a few ingredients that you likely already have on hand, they only take a few minutes to make. Trust me, if you can make pancakes, you can make homemade crepes.

Start by mixing together all the ingredients with a whisk.

Pour the batter into a hot skillet or griddle, using approximately 1/4 cup batter for each crepe.

Tilt the pan with a circular motion to help the batter coat the surface evenly. Cook your crepes for about 2 minutes, turning once.

Now, are your crepes all going to be beautiful and perfectly round? Probably not. Are they going to taste delicious? You bet they are.

You can really let your imagination run wild when it comes to fillings. Fruit spreads, chocolate hazelnut spread, and whipped cream are all delicious choices for sweet crepes. Shredded creamy chicken, mushrooms, spinach, and other ingredients make tasty choices for savory crepes.

For me, lemon and powdered sugar crepes are a classic that will never go out of style. They work for breakfast, brunch, or dessert.

Once your crepes are cooked simply squeeze some fresh lemon juice on top, dust with powdered sugar, and enjoy!

Sweet Crepes

Ingredients

  • 1 cup flour
  • 1 1/2 cups milk
  • 2 eggs, slightly beaten
  • 2 Tbsp sugar
  • 1 Tbsp oil
  • 1/8 tsp salt

Savory Crepes

Ingredients

  • 1 cup flour
  • 1 1/2 cups milk
  • 2 eggs, slightly beaten
  • 1 Tbsp oil
  • 1/4 tsp salt

Homemade Crepes Directions

  • In a large mixing bowl, whisk together the flour and milk.
  • Add in the eggs, stirring to combine.
  • Add in the oil, salt, and sugar (for the sweet crepes), and whisk until smooth.
  • Heat a lightly oiled griddle or frying pan over medium low heat.
  • Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe.
  • Tilt the pan in a circular motion to spread the batter evenly.
  • Cook the crepes for about 1 minute, until the bottom is light brown. Loosen with a spatula, turn over, and cook the other side.
  • Serve hot and enjoy!
