Hollyday Mint Pie

This is one of my favorite pies. I usually make it for Christmas ever year. Last year, with my sister getting married, things got a little chaotic and it didn’t get made. The ingredients for it (the cookies at least) have been sitting unopened in the pantry waiting for me since then. (The Cool Whip and cream cheese had been used and new ones purchased).

I don’t even know how to describe this pie. It’s cheesecake-y, but fluffier. It’s chocolate-y. It’s minty. It’s heavenly is what it is.

I got the recipe from my Mom. Not sure where she got it from.

Hollyday Mint Pie

1 c. crushed Keebler Grasshopper Fudge Mint cookies
3 tbsp. hot water
1 (16 oz.) Ready-Crust Graham Cracker pie crust
1 (3 oz.) pkg. cream cheese, softened
1/3 c. sugar
2 tbsp. milk
1/4 tsp. peppermint extract
3 1/2 c. (8 oz.) Cool Whip Whipping Topping, thawed
6-10 drops green food coloring

Mix cookies and hot water. Spoon into crust and gently spread to cover the bottom. 

Beat cream cheese until smooth. Gradually beat in sugar, milk and peppermint extract. Fold in whipped topping. 
Divide mixture in half. Stir food coloring into one half until evenly colored. 
Fill pie crust with alternate dollops of white and green whipped topping mixtures. Smooth top of pie with spatula. 
Chill 3 hours.
