Dark Chocolate Texas Sheet Cake

January 27, 2014 by Julie 4 Comments

Poor planning sometimes turns out in my favor.

I forgot to plan a dessert for our dinner guests on Saturday night. With less than an hour until they arrived I tore through my pantry in a panic, trying to see what ingredients I had on hand. I quickly realized I could make a Texas Sheet Cake in the time I had, but I only had dark chocolate cocoa and no regular cocoa.

Turns out, that was completely okay.

Texas Sheet Cake

Ingredients:
2 sticks butter
1cup water
4 tablespoons dark cocoa
2 cups flour
2 cups sugar
2 eggs
1teaspoon baking soda
1/2 cup milk

Frosting:
1 stick butter
4 tablespoons dark cocoa
6 tablespoons milk
1 teaspoon vanilla
1 teaspoon cinnamon
1 pound powdered sugar

Bring butter, water, and cocoa to a boil. Add flour, sugar, and eggs. Dissolve baking soda into milk. Add to mixture and mix well. Bake in greased cookie sheet (those jelly roll pans work best) at 350 degrees for 20-25 minutes.

While cake is baking make frosting. Bring butter, cocoa, milk, and vanilla to a boil. Beat in powdered sugar. Frost while the cake is hot.
