What’s more summery than pineapple? Celebrate the warmer weather with a Mini Pineapple Upside Down Cake!
There is something so cheerful about pineapples. I love seeing them at the grocery store. I’ve made crochet pineapples. I’ve created pineapple crafts. And eating pineapple is pretty sweet, too.
Littlest and I originally made this treat when we were doing preschool activities and upside down cakes were our letter U baking activity.
Rather than one large upside down cake I used my mini bundt pan to make several mini (or personal sized) upside down cakes. Because of the size of the pan I also used crushed pineapple for the cakes rather than whole pineapple slices. I also used a box cake mix. I’m a big fan of cake mix hacks and usually use a box mix as the basis for all of my ‘homemade’ cakes. (Though I do make a terrific Texas Sheet Cake from scratch.)
Start by placing the butter in the bottom of the pan. Then add the pineapple and topping mixture from the cake mix. Lastly the cake batter gets poured on top. Then it all goes in the oven to bake.
While I adore baked fruit dessert (cobblers, crunches, pies, you name it) not every in my house is as excited about them. Littlest was a little apprehensive to try our mini cakes, but then was all smiles after his first bite. Mainly he just didn’t understand why I wanted to take a picture of him eating.

These look awesome! I have been very into mini desserts lately. They are so easy to bake. I automatically freeze half of them (so I don’t eat them all) and they are great to pull out and quickly thaw when you have unexpected company (I live in the south where you are expected to offer guests coffee and a treat).
