The idea of making Key Lime Cheesecake Bites was that a smaller portion size would mean I would eat less cheesecake. Not so much. I just ate more bites. Because they were really good.
I started by mixing up my favorite no bake cheesecake recipe. Essentially cream cheese, powdered sugar, and whipped topping all mixed together. Because I wanted these to be key lime cheesecakes I also added the juice and zest of some key limes. The limes add some zest and just make the whole thing feel a little more summery. I put the mixture into a plastic bag and let it sit in the refrigerator while I baked my puff pastry.
I found these bite sized puff pastry cups at the store. I baked them according to the directions on the package and let them cool.
Once they were done I got the no-bake cheesecake mixture out, snipped the corner, and piped it into the ready cups.
If you want to go ahead and add some lime garnish.
Youngest Twin had his last day of school on Monday. Yep, a Monday. It was an inclement weather make-up day. These flaky bite-sized treats were the perfect way to officially kick off our summer vacation.
