Yep, I ended up with the stomach flu for my birthday weekend. So this past weekend we did a little belated celebrating. Breakfast with my sisters, lunch with my Dad, and plenty of dessert all weekend long.
Chocolate and coconut is one of my favorite dessert combinations. So instead of a cake this year I made myself some Magic Bars using my Mom’s recipe.
I have the recipe on my phone so I can refer back to it while I’m making the Magic Bars. (See the phone there in the corner!)

Dessert and a movie on the TV is one of our favorite ways to spend an evening together. And if you’ve never watched my Littlest during movie night, it is not a sitting still activity for him. He gets very animated during his favorite scenes. The downside to movie night is that it’s dark and hard to capture his excitement.

- 1/2 cup butter
- 1 1/2 cups graham cracker crumbs
- 1 (14 oz) can sweetened condensed milk
- 6 oz chocolate chips
- 1 1/3 cups flaked coconut
- 1 cup chopped nuts (I used pecans)
- Preheat oven to 350 (325 for glass pans)
- In a 13×9 baking dish, melt butter in the oven.
- Sprinkle graham cracker crumbs over melted butter.
- Top with nuts, coconut, chocolate chips, and sweetened condensed milk. Press down firmly.
- Bake 25 to 30 minutes or until lightly browned.
- Cool. Cut into bars and enjoy.
- Store leftovers loosely covered at room temperature.
